Recipe for Salmon with Quinoa, Kale and Grape salad
Ingredients:
1 lb of Salmon
1 and 1/2 cups of cooked quinoa
1 cup of kale, rinsed.
10-20 grapes cut in half lengthwise
1 tbsp olive oil
1/2 lemon Salt and pepper to taste
Dressing for salad:
3 tbsp olive oil
Juice from 1/2 lemon
Juice from 1/4 orange
1 tbsp honey
1 tsp garlic powder salt and pepper to taste
Method:
1. Rub a few drops of olive oil on raw salmon filets and then season with salt and pepper and lemon juice. Bake salmon in a preheated, 400 degree oven for 15 minutes (or until fish flakes easily)
2. While salmon is baking combine remaining ingredients in bowl, combine dressing ingredients and mix together.
3. Serve salmon with quinoa, kale and grape salad.
